Lemon Spinach Artichoke Soup

3 cups chicken or vegetable stock
1 1/2 cups water
2 celery stocks, diced
2 carrots, diced
1/2 yellow onion, diced
2 Artichoke hearts, quartered
2 cups spinach
2 tbsp. lemon juice
1/4 tsp. basil
1/4 tsp. thyme
1/4 tsp. rosemary
1/4 tsp. oregano
1 pat butter
Salt
Pepper
Directions
Wash celery and peel carrots. Chop up celery, carrots and onion.
In a large pot, add 1 pat of butter to the bottom and stir in celery, carrot and onion.
Once the vegetables are cooked, add in vegetable broth and water, then bring to a low boil.
Add in quartered artichoke hearts and spinach along with the lemon juice. Adjust dry seasonings to taste. Cook until slightly thickened.
Serve and enjoy!
