    Ingredients

    • 1 lb of chopped mushrooms (mixed variety)

    • 2 tbsp olive oil

    • 2 tsp cumin

    • 3 tsp garlic powder

    • 1 tbsp onion powder

    • 1 tbsp oregano

    • Salt and pepper to taste

    • Corn tortillas

    • Chopped onions & cilantro

    Directions

    • Preheat oven to 400 Degrees

    • Toss mushrooms in oil, cumin, garlic powder, onion powder, oregano, salt, and pepper and spread out evenly on a parchment-lined baking sheet

    • Roast until the mushrooms are golden brown and fragrant, about 25 minutes

    • Build the tacos. Add mushrooms and onions/cilantro to taste! Add your favorite salsa or sour cream and bon appetit!
